Had the opportunity to stay at Coppid Beech Hotel (John Nike Way, Bracknell RG12 8TF, United Kingdom) for 4 days 3 nights when I was in the UK in August.

It’s a 5-hour plus drive from our place to the hotel. While on the way there, we made a stop at a Services for lunch. We had KFC and noddles from Chopstix Noodle Bar.

After having our lunch and toilet break, we continued driving to meet our relative first before going to the hotel. By the the time we reached the hotel, it was already 8pm or so. After all of us had settled down, it’s almost 10pm-ish. We called it a night as we need to wake up early the next day to Legoland Windsor.

Hope that you find this quick review useful. It’s certainly an option to consider if you don’t want to live in Legoland and you want to keep your family in one room.

A Visit to Northern Dales Farmer’s Markets

On a Sunday morning, we decided to head out early to visit the Northern Dales Farmer’s Markets during our summer vacation. The market happens on the third Sunday of every month. We’re in luck as we’re there on the said day in August.

You can find them at Thirsk, Hartlepool, Middlesbrough, Borough of Stockton-on-Tees, Stokesley, and Northallerton. They don’t happen on the same days. You have to check out their FB page to get updates of the dates or any news related to the markets.

It’s a very small market but with lots of choices of products from individuals and local businesses to see and buy. It is best to go early if you want to get something as they ran out fast. Quite an interesting monthly event to support the local businesses.

Unique Ice cream @ Hotel Chocolat

Back then, I only knew Hotel Chocolat for its chocolates. Only the recent years I got to know its ice cream. The first time I came across the chocolate was back in 2007. That’s almost 20 years!

This year, I got the chance to taste the ice cream. I did the ice cream review on my Instagram.

I mentioned all the good things on my Instagram. However, it’s not all perfect. There’s also one down side about the ice cream. It melts really fast. So you can’t really take your sweet time savouring it.

Easy Steamed Tofu with Minced Meat

This is my first time making steamed tofu with minced meat. Apparently, it is not hard at all. Quite easy.

By the way, I have no measurements for the ingredients. It’s all based on my gut feelings. However, if you know how to cook, I’m sure you know how much seasoning you need. There is no right and wrong at all.

Watch the video to see how I did it. A bit disoriented but it works too.

You just need to steam the tofu for 8 minutes with high heat. Meanwhile, stir fry the minced with seasoning and sauces of your choice. Remember to drain the water of the tofu after steaming. Next, pour the minced on top of the steamed tofu. Lastly, garnish with chopped spring onions and served.

Easy Self-Rising Flour Pancake Recipe

Usually, I make pancake with multi-purpose flour. This time, I’m trying to use self-rising flour. It works too. It resulted in crispy corner which I never get when I use normal flour.

Ingredients:
4 Tbsp self-rising flour
1 Tbsp custard powder
1-2 Tbsp sugar
1 medium egg
Pinch of salt (optional)
100-120ml Water (might need more or less, depending on the consistency you want)
Butter/oil for cooking

Steps:

  1. Mix everything well.
  2. Heat and grease the pan with butter/oil.
  3. Cook the pancake until it’s cooked.
  4. That’s all! Eat!
